Made a tasty-ass delicious colorful meal for lunch!

Roasted potatos, cucumber, beetroot, carrot, onion, green peas, hacked spinach, tomato, lettuce & mushed eggplant (aubergine).

I washed and scrubbed the potatos, hacked them in four, boiled them a little before putting them on a plate and in the oven for around 40 min. Added olive oil, peppar & herb spices. While they were roasting I prepared the rest.

Cucumber; Clenses your body, around 90 % of the cucumber is water and the fluid helps the body to get moisturized and reduces the risk of dehydration. Regular intake can also reduce the risk of kidney stones and brings out the residual waste from the body. + Vitamin A, B & C and also contains potassium which has a positive effect on the heart and arteries.

Beetroot; Hhydrates, B9, Folic Acid, Vitamin C, Potassium, Sodium, Magnesium and Antioxidants. + Beetroot also clears the intestines, detoxifies the liver and gallbladder of toxics.

Carrot; Filled with vitamin A, B6 & C. Potassium & antioxidants. And very rich on carotene, which improves the night vision, prevents against cataracts and age-related changes in the retina, basically wonders for your eyes/sight. The carotene is also amazing for your skin, and on top of that, carrots are also bacterial and viral killing.

Onion; Filled with antioxidants, great immune system boost, cleanses our body and onions are good for our blood vessels.

Green Peas; Green peas have a high content of magnesium, phosphorus, potassium, but also vitamin C, zinc, calcium, folic acid and iron.

Spinach; Packed with Vitamin A, B2,B6,B9,C,E & Also loads of potassium,
calcium, magnesium & iron. It is also considered good for stomach ulcer. Spinach also contains Coenzyme Q-10, copper and other beneficial substances.

Lettuce; Vitamin A, carotene & potassium.

Eggplant; Calcium, folic acid and phosphoric. Clenses your blood.

Tomato; I have a feeling that people tend to under appreciate tomatos, but they’re filled with alpha and beta carotene, lutein and lycopene. They help your skin get a better tone, especially if you’re tanning and will get your liver cleansed easier. Great antioxidants, Vitamin E and vitamin C.
